I have no idea how to switch off or on and no instructions to switch on or off in the manual or on your utube guide

Shows you the button on the video on left side of steering wheel .

Ok the system you show is the opal system in the 2014 it's Vuaxall link and the button on the steering wheel is the voice activation to give commands when pressed it defaults to another screen it is not a on/off switch
