2004 Peugeot 206 temperature keeps going to red

My car temperature gauge keeps going in to the red bit, one minute its fine then its in the red and the stop sign comes on, when i pull over the fan is on and the gauge goes back down the most it stays high once engine is stopped for is a couple of minutes, ive had a new thermostat fitted the coolant water tank thing emptied twice and the pipes unblocked because they were full of brown gunk but are now clear can anyboby tell my why they think this is still hapening thanks

could be a coolant thermistor fault but i think its possibly signs of head gasket failure. Have a block test done to see if there are combustion gases in the coolant expansion bottle.

my car do the same.the only differince is that when the fan came on, the engin is getting warmer (the gauge show it goes from the 90 mark to the red).when the fan goes off, the gauge shows that it cools down instantly back to 90 from red.
please help!
