2000 Vauxhall Astra pulling back when accelerating

Could be an air intake restriction. Check the air filter for cleanliness and check all the intake duct for any blockages that may restrict the air flow...

Sounds to me like it may be a fuel delivery problem, had the same thing myself with an old van. Was fine whilst at a constant speed but when I tried to accelerate it wasn't able to cope.
