what does it mean when your driving at high speed(around 80) and out of nowhere the revs fly right up and go back down again?

If the clutch was slipping you should get the symptoms in all gears when under load .Ie engine revs up and loses power . Does it do this all the time or was it a one off at that speed ? This link gives you an idea whats invoved in cleaning throttle body if sticking . You can get a throttle spray at any good accessory shop/ store for a couple of quid . A simple job to clean butterfly etc .It may not be that but worth a try .There are other possible causes like the throttle position sensor for example but try cleaning throttle body first .
