Do you mean the temperature goes to cold?
Usually the engine will have a safeguard in place and cut the engine if it overheats, but not cold. If the gauge drops its possible there is no water in the pipe to get a reading so it goes cold but the engine overheats and cuts out.
Or it could possibly be a faulty temp. sender
