2003 Peugeot 307 temperature too high, stop engine

While moving even in very cold weather or when the car has just been started, the temperature indicator increases and says temperature too high stop engine. After a while it falls back . What could actually be the cause? I have checked the coolant and fan. They are all working properly. Am so confused

If you`re sure the engine isn`t overheating, I would think it`s a problem with the temp. sensor unit/gauge or a dodgy wire/connection.

307's are prone to faulty temp sender units. it is located behind bumper on radiator cradle( small square black box - 6cm x6cm) replace it or get an auto electrician to repair it and you will be sorted.
