2003 Mitsubishi L200 temperatures

Temperatures go up when I drive on 70/80 miles

Coolant pump,
thermostat,
radiator..........
List goes on and on,
First thing to establish is just how high the temperature is getting.
Preferably with an independent gauge.
Vehicle sensors/gauges have been known to be wrong.
