No heat coming into car

air into car goes from hot to cold and back again even though engine temp stays normal. Had new thermostate and water pump fitted, done a block test and thats ok.

The thermostat is a problem area on these and are prone to leaks albeit in a minor way, as you have had this changed I suspect your problem may be due to an airlock , did you bleed the coolant system ?
there is a bleed screw on a heater hose behind the thermostat, another on a metal pipe that runs underneath the inlet manifold and another on the top hose. Your car may not have all of these, depends on
year of manufacture. An air lock usually is accompanied with a random gurgling heard inside the car.
If the car has been severly overheated also consider
head gasket, warped head ,sometimes the engine may be junked (worst case) they are £4000
