2000 Ford Fiesta tempreture spiking and loss of power

the tempreture gauge in my fiesta keeps spiking and i lose power especially when i put my foot down to overtake or driving on motorway then it will sort itself in a minute or so can anybody tell me what is wrong and how to sort i've had a new thermostat as when i was having my heater sorted the mechanic spotted that the middle had been cut out

From what you say , you have had probs . with cooling system i.e heater and thermostat.Looks as if it hasn't been solved and is ongoing.Many possiblilities , like fan not cutting in , radiator etc. etc..Another cause could be head gasket which would pressurise system and then cause air locks affecting heater . A sniff test will verify if there is any probs. , simple test .
