2000 Ford Fiesta overheating problem

Ive got a ford fieata zetec s 1.6. When I drive it over 50 the temputure gadge starts rising and goes into the red. Then when I come up to a junction and slow down the temputure gadge goes back to normal again.. Ive had the water pump cambelt, water temp sensor done and a new thermostat done. Any body that can help would be great thanks.

Check you are getting equal temperature on both top and bottom radiator hoses in case there's a blockage ,other thing is the fan cutting in correctly to cool the radiator.If these thing,s check out okay then could be a cylinder head gasket .
