Engine temperature warning light on

Changed both of the water temperature sensors. temperature light still jumps up to the red. seems to happen when the car is starting to cool down a little it goes from three lights to two and a few seconds later jumps up into the red with fan on full. engine is not hot.

If that year / model is a diesel , sounds as if DPF is regenerating . If so and used for short journeys , advisable to give a good , fast run for a while to complete process
