Random overheating light

Hi there was wondering if anyone could help me, the past month or so my car has been saying its been overheating but it just isn't? For example I can start my car in the morning or infact anytime of day I drive about a mile down the road and the warning light comes on and it reads out "engine overheating stop" but it just isn't the engine is just not hot. I have replaced thermostat and the sensor on the housing, the sensor on top of the block and the head gasket and the water pump and flushed the system for blockages and non of this has helped, so has anyone had the same trouble or even a solution? Possibly needs the fault codes read and cleared out if you have done all that unless it,s a wiring issue.

do you have aircon? and when it says its overheating does the temp gauge shoot up to the red?
