Engine temperature issues

Engine temperature after starting is fine but once thermostat opens temperature drops to below 80 degrees, coolant in tank warm and at required level, oil is fine but I have only bought car this may be down to new oil to mask issues.

Replace the thermostat.
They're meant to open at 88 if I recall right,
And close when cooler than that.
Might be yours is weak and opening too soon.
In my experience Vauxhall 'Stats run way higher than yours.
Fans coming on at over 100 and scaring poor techs into buying/fitting CTS as they're worried it's running hot.
Me,
I'd just done a head gasket and it really had me going.
So I fitted a new CTS and waited for what seemed a really long time for the fans to kick in,
These engines run to what seems a really high temperature.
So change the 'stat.

Notorious for years waiting for VX engine fan to cut in , usually right in the red before doing so .If you suspect head gasket leaking , a block test will confirm or not .But as suggested thermostat suspect .
