Head gasket went so I got fixed, the head was skimmed and new gasket and thermostat and it only lasted a few weeks and the pressure started building up again so I got it done again and the same thing is happening and the head was never cracked????

Did you get the head pressure tested for cracks ?

Or it could be a cracked cylinder.
I'd start by liquid gas detection with a block teser.
