Coolant light

Coolant light sort of quivers then shoots to red.
I can drive various distances at various speeds then all of a sudden coolant light comes on if I turn off the engine and wait for fans to stop and start up again it goes back to normal.
Coolant is warm to touch but not red hot.
Could it be thermostat or sensor or something else.

If no coolant loss I would try checking / replacing the thermostat and coolant temp sensor first hoping that cures it and is nothing more serious .
