2001 Ford Mondeo temp guage

Hello everybody
My 2001 1.8 lx temperature gauge has started to go right up to the red for no apparent reason.
When sitting in traffic it works ok but when on the open road it will just rise in a matter of seconds stay there for a while and then drop right down to cold and then back up to normal.
When the temp rises the heater goes cold?????
There is also a bubbling sound from the header tank when you stop.

run engine from cold with rad cap off and heater on red lo fan.when header stops going down system is bled .if water shoots out of tank poss head gasget.if its been hot youll need a new thermostat.check all pipes and rad get hot.the list of things to do is long try this first

added rad weld plus and this seems too have cured it for thanks for the help
