1996 Ford Fiesta loss of acceleration above 70mph

Car: Ford Fiesta
Year: 1996
Variant: 1.25 manual petrol
Categories: Running Rough, Starting & Power Loss
I have a Ford Fiesta 1996 1.25. I have a problem when I reach about 70mph. If I put the foot all the way to the floor, it will refuse to go above 70mph and will instead judder in a rhythmic fashion.

I seem to have to find a sweet spot for the pedal position, usually around 75% down before it will accelerate to up to 80 mph but persistently losing power when I use the pedal at anything above 7mph. I am hammering the pedal and no response. SO this leaves me at about 75mph without ANY use of accelerator until it goes back to 70 again and I have to find the sweet spot again.

I am unaware of any previous work apart from a new set of spark plugs and cables about 6 months ago to try fix the same problem but to no avail.
