Driving the car with the oil level below min will wear the engine so get it topped up asap.
Regarding burning oil I reckon a modern car should burn less than a litre of oil in 5000 miles. (mine has 120k on the clock, is 22 years old and uses less than a litre in 10,000 miles) As the engine wears it will burn more. When it gets bad the exhaust smoke will look blue aspecially on over run from high revs.
If you are burning oil it should show up high hydrocarbons on the emissions test they do for the MOT. A friendly garage will probaby test your exhaust emissions for the price of a beer.
Check it's not a leaking oil too.
